Talc is what makes soapstone soft, heat tolerant and free of any need for sealing. Soapstone is a talc schist, a rock made mostly of talc with some chlorite and amphibole, and talc defines the very bottom of the Mohs scale at 1. That single mineral explains almost everything a soapstone owner lives with.
Soapstone is used to line wood stoves, build fireplace surrounds and make masonry heaters, because its density lets it absorb, store and evenly radiate heat. Beside a range, it is a landing zone for a pot straight off the burner. A trivet is still a good habit, mainly to protect the oil finish.
Soapstone is non-porous, so unlike marble and granite it is never sealed. Spills sit on the surface instead of soaking in.
Lemon, vinegar and tomato do not etch soapstone the way they etch marble. Harsh cleaners can strip the oil, but they do not harm the stone.
This is the trade-off. A stone this soft marks from a dropped pan or a dragged cast iron skillet. The good news is that the marks come back out, which is the subject of the next section. Its old trade name, the quiet stone, fits a kitchen where people linger.
Mineral oil darkens soapstone evenly, and fine sandpaper removes scratches, so the surface can always be brought back. Neither step is required to protect the stone. Both are about how you want it to look.
Soapstone darkens with use on its own. Mineral oil speeds that up and evens it out, so the whole top darkens to one even tone. Reapply whenever the last coat fades. Most slabs need periodic oiling over roughly six to eight months before they hold their dark color for good.
Many owners never oil at all. The stone darkens slowly and unevenly where hands and pans touch it most, building a weathered patina that suits an old farmhouse kitchen.
A dab of mineral oil hides a light scratch. A deeper one is sanded out in small circles with coarse paper, then smoothed with finer paper and water, then re-oiled. We show you how on install day. No other stone on our list forgives this easily. A chip in granite or quartzite is filled with epoxy and polished; a scratch in soapstone is simply sanded away.

Soapstone belongs in the kitchens of these mountains because it has been part of them for thousands of years. North Carolina's own archaeologists describe soapstone as an impure talcy rock found in many parts of the state's piedmont and mountains, and Native Americans carved bowls and cooking slabs from it from the Late Archaic period. At the Blue Rock quarry in Yancey County, the scars left by bowl blanks chiseled from the outcrop are still visible. Today's countertop slabs mostly come from Brazil, India, Finland and Canada, with one active North American mine in central Virginia. The stone is the same one those early cooks worked.
